Feeding Seven–Or More

Baseball try-outs were this week.

This year Kevin and I have three playing (OH JOY!)  With our baseball life comes lots of concession food, sunflower seeds and late night dinners.  I needed a better way to do meals, and my biggest weakness is mealtime organization.  My good friend sent me home with her menu planner–It works great for her, but I needed to modify it a bit for us, because our weekends are full  too.  I plan for those meals as well.  I came up with a monthly menu-planner that allows me to fill out for a month or a week.  Sometimes my life falls into place and I could possibly plan a month at a time. But, most often, I am  a walking  DISASTER.  I didn’t want to tackle a whole month on my first try, with this planner  you can break off into weekly  chunks if you’re new to this being organized thing like I am…….

Here’s our Family Favorite

Crock Pot Chicken Tacos
4-5 Frozen Chicken Breasts
1 1/2 Cup Water divided
3-4 Bouillon Cubes or Chicken Base
Salt and Pepper–To Taste.
Cook over low heat for 6-8 hours or until chicken is cooked through and can be shredded with a fork.
Add the second 1/2 cup of water and package of taco seasoning or make your own and mix (there’s a recipe for mine below.)
Heat up your tortillas. Grab your chips, cheese, olives, guacamole and get ready to eat on the RUN!
Taco Seasoning
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon black pepper
Add more or less red pepper flake to your spice taste!  We like things a little more spicy! and make sure to store in an airtight container.
